12th Annual Jam Contest - Winning Recipe
SWEET & SPICY PIZZA JAM

- 3 oz onion, sliced
- 1/4 oz garlic, sliced
- 1 lb tomatoes, diced (any combo - I used Yellow Grape, Chocolate Cherry, and Mr. Stripey heirloom for the contest)
- 1/4 cup red wine vinegar
- 1/3 cup sugar
- ~1/2 t. red pepper flakes (use more for additional heat)
- ~1/2 t. sea salt (varies depending on how flavorful your tomatoes are)
- Sweat onion and garlic.
- Add rest of ingredients. Simmer and stir occasionally until it reaches 220°F. Cool immediately in ice bath.
